Part of living a good and healthy life means enjoying good food SO even though I have started The One Diet group, I still plan to post recipes for delicious food and drinks like today’s Chicken with Peanut Sauce recipe. I believe that we can eat anything and still maintain healthy habits, and anyway, I don’t want to live a life where I have to stop eating things I love because of a “diet.” SO THERE. Furthermore, I think the better food tastes and the more we enjoy the experience around food, the more balanced we eat – both in terms of nutrition and quantity.  All that is to say 1) please keep reading and trying my recipes, and 2) recipes like this one that involve a bit more prep are worth it because they taste amazing!

You start by making this wonderful marinade – it’s actually pretty easy using a blender or food processor!

Next, choose your chicken and marinate it. I happened to have chicken breasts so used those but this would be just as good – maybe even better – with wings, drumsticks or thighs. In retrospect, I wish I would have put my strips on a skewer and called them satay!

While the chicken is marinating, mix up the peanut sauce which is a delicious blend of peanut butter, cream of coconut, garlic, red pepper, soy sauce, and red pepper flakes. I blended it up in my Ninja then warmed it in the microwave just before serving.

You can cook your chicken on the grill or in the oven like me since I am the worst BBQ-er known to man.

Everyone is going to want their own little dish of peanut sauce for ample dipping or I suppose you could pour it over top. Your choice.

I served this when our hockey friends and their son came over for dinner. Without prompting, my darling daughter rated it as negative 1. Insert straight-faced emoji. However, our guests raved about it and said it was an easy 10 out of 10, the most delicious thing they had eaten in recent memory. So, I guarantee you’ll either love it or hate it, or anything in between! Insert winking emoji.

Chicken with Peanut Sauce

This marinated chicken is full of spice and flavour and the peanut butter sauce is so good, you'll want to eat it by the spoonful!

Ingredients

For the marinade, blend the following together in a food processor or blender. Mix with chicken in large bowl and marinate covered in the fridge for as long as you can manage - as little as one hour, as much as overnight.

  • 1/2 onion, chopped
  • 5 cloves garlic
  • 2 tsp salt
  • 2 tsp paprika
  • 1 tsp dried rosemary
  • 1 tbsp Chinese 5 Spice Powder
  • 1/2 tsp cayenne pepper
  • 2 tbsp oil
  • 6 or 7 boneless skinless chicken breasts or any other family size bulk package of chicken wings, drumsticks or thighs

For the peanut sauce, blend the following together in a food processor or blender.

  • 2/3 cup peanut butter - I used crunchy!
  • 1/2 cup cream of coconut
  • 5 cloves garlic
  • 1/2 cup water
  • 1/2 cup red bell pepper (about half a medium sized pepper)
  • 2 tsp soy sauce
  • 1/8 tsp red pepper flakes or to taste

Instructions

  1. After marinating chicken, grill or bake in 425 degree oven for about 30-35 minutes till golden and crispy.

  2. Just before serving, warm sauce in the microwave.

  3. Steel yourself for ratings ranging from -1 to 10, but secretly appreciate those naysayers because that means more peanut sauce for you!

  4. These taste great served with rice OR in a wrap! YUMMMMMM.

    BTW, started follow the ONE DIET method this week. No in-between-meal snacks before lunch. It’s the tiniest of steps but it’s a start.

        Made the chicken with peanut sauce a couple and it was a tremendous hit! The only adjust I made to the recipe was to add more oil to the marinade because my concoction was a little too dry; I marinated for 24 hours and the chicken was so tender and juicy.
