Cashew Coleslaw

Sweet and tangy, crunchy and delicious, this Cashew Coleslaw recipe comes together fast and will become your new favourite coleslaw!

  • 1 1/2 cups cashew pieces
  • 1 package Ichiban noodles, only noodles - break them up before you open the package and discard the seasoning pack

Put cashews and noodles on a cookie sheet and toast at 350 degrees for about 8 minutes until golden.

  • 1/2 cup white sugar
  • 1/2 cup vegetable oil
  • 1/4 cup apple cider vinegar
  • 1 1/2 tbsp soy sauce

Mix these together for the dressing.

  • 1 package coleslaw
  • 1 bunch green onions, chopped


  1. Mix nuts, noodles, coleslaw, green onions, and dressing together in a bowl. You can do this a bit ahead of time and let it sit for the flavours to blend together.

  2. Serve some to friends then eat the rest for lunch the next day. ;P
